- 360 g flour + some for dusting
- 200 g warm water
- 35 g oil + a little for brushing
- 5 g dried yeast
- 4 g baking powder
- 35 g white sugar

- 700 g oyster mushrooms
- Soy sauce

INSTRUCTIONS
- 1First, prepare the Bao Buns dough. Weigh out the flour, sugar, dried yeast, and baking powder. Mix the dry ingredients with a whisk.
- 2Add warm water with oil and knead the dough using a stand mixer or by hand. It's important to knead for about 10 minutes. At the end of kneading, the dough should be beautifully smooth. Cover and let it rise for about an hour.
- 3Tear the oyster mushrooms by hand along their fibers into small pieces – set aside for later.
- 4Process the carrot and cucumber (remove the cucumber's core) using a julienne peeler or cut by hand into thin strips. Then add lime juice and vegan fish sauce.
- 5After an hour of rising, divide the dough into 12 balls.
- 6Cut 12 squares of baking paper, approximately 10 x 10 cm. Place a prepared dough ball on the baking paper and roll it into a round flatbread. Lightly brush the flatbread with oil and fold it exactly in half. Lightly roll over the baking paper again with a rolling pin. (The oil will prevent the dough from sticking together) Steam in a steamer for about 12 minutes.
- 7Back to the oyster mushrooms – pan-fry the torn, lightly salted oyster mushrooms with oil until crispy. Don't be afraid to leave them in the pan longer to ensure they are crispy. Finally, turn off the heat, add soy sauce, and mix well.
- 8Add oyster mushrooms, salad, coriander to the steamed Bao Buns, drizzle with lime, and add Sriracha mixed with mayonnaise.
