- 360 g of flour + some for dusting
- 200 g of warm water
- 35 g of oil + a little for brushing
- 5 g of dry yeast
- 4 g of baking powder
- 35 g of white sugar

INSTRUCTIONS
- 1First, prepare the dough for Bao Buns. Weigh the flour, sugar, dry yeast, and baking powder. Mix the dry ingredients with a whisk.
- 2Add warm water with oil and knead the dough using a mixer or by hand. It is important to knead for about 10 minutes. At the end of kneading, the dough is beautifully smooth. Let it rise covered for about an hour.
- 3Tear the oyster mushrooms into small pieces along their fibers using your hands – set aside for later.
- 4Process the carrot and cucumber (remove the seeds from the cucumber) using a julienne peeler or cut into thin strips by hand. Then add lime juice and vegan fish sauce.
- 5After an hour of rising, divide the dough into 12 balls.
- 6Cut 12 squares of baking paper measuring approximately 10 x 10 cm. Place a prepared dough ball on the baking paper and roll it into a round flatbread. Lightly brush the flatbread with oil and fold it exactly in half. Lightly roll over the baking paper again with a rolling pin. (The oil ensures that the dough does not stick together) Steam in a steamer for about 12 minutes.
- 7Back to the oyster mushrooms – lightly salt the torn mushrooms and fry them in a pan with oil until crispy. Don't be afraid to leave them on the pan longer to make them crispy. Finally, turn off the heat, add soy sauce, and mix well.
- 8Add the oyster mushrooms, salad, coriander, drizzle with lime, and add Sriracha mixed with mayonnaise to the steamed Bao Buns.
