INGREDIENTS

  • 300 g orzo
  • 300 g oyster mushrooms
  • 160 g shiitake
  • 3 large shallots
  • 5 cloves of garlic
  • 40 g butter
  • 600 ml vegetable broth
  • 200 g Parmesan
  • 4 sprigs of fresh thyme
  • Pink pepper
  • Salt

INSTRUCTIONS

    Sauté the finely chopped shallot and sliced garlic in half of the butter until golden brown.

    Add the oyster mushrooms cut into larger pieces. Halve the shiitake mushrooms, leaving smaller caps whole. Sauté everything together for a little while longer.

    Add the orzo and mix with the mushrooms. Add chopped thyme. Pour in the broth and let it simmer on low heat for about ten minutes until the orzo is soft. If necessary, add a little more broth or water.

    Once the orzo is done, stir in the remaining butter and half of the finely grated Parmesan. Season with salt and pepper. Serve sprinkled with Parmesan shavings.
