  • 250 g black salsify
  • 200 g potatoes
  • 1 piece shallot
  • 1 tablespoon sunflower oil
  • 0.5 liter chicken broth
  • 1 clove garlic
  • 1 teaspoon salt
  • Ground pepper

INGREDIENTS FOR SAVORY GRANOLA FOR SERVING

  • 20 g almonds
  • 20 g hazelnuts
  • 1 tablespoon sunflower seeds
  • 1 tablespoon whole poppy seeds
  • Pinch of salt

INSTRUCTIONS

    Peel the potatoes and cut them into small pieces. Clean the black salsify using a potato peeler and cut it into cubes. Work with gloves, as the root secretes a substance that sticks to the fingers. Finely chop the shallot. Crush the garlic clove.

    Pour oil into a pot and fry the onion until translucent. Add the black salsify and sauté for about 2 minutes. This will extract more flavor from the vegetables. Add the potatoes, pour in the broth, and cook until softened.

    Transfer the soup to a blender and blend. This will give it a fluffy and creamy texture. Season with salt, ground pepper, and garlic.

    Chop the nuts into smaller pieces, mix with seeds, salt, and poppy seeds, and toast in a pan for a few minutes.

    Before serving, sprinkle the soup with savory granola and drizzle with olive oil.
