INGREDIENTS
- 600 g chicken breasts
- 350 g cherry tomatoes
- 1 cucumber
- 200 g feta cheese
- Dried oregano
- Dried basil
- 1 red onion
- 320 g pitted green olives (in brine)
- 320 g pitted black olives (in brine)
- 4 pieces of pita bread
- Juice of ½ lemon
- Olive oil
- Salt
- Freshly ground black pepper
INGREDIENTS FOR TZATZIKI
- 1 cucumber
- 400 g Greek yogurt
- 2 cloves of garlic
- 2 tablespoons chopped fresh dill
- 1 tablespoon chopped fresh mint
- Juice of ½ lemon
- Olive oil
- Salt
- Freshly ground black pepper
INSTRUCTIONS
- 1Wash the chicken breasts. Mix 4 tablespoons of olive oil with 2 tablespoons of dried oregano and 2 tablespoons of dried basil. Season with salt and pepper. Rub the mixture into the chicken meat and let it marinate for at least 1 hour in the refrigerator.
- 2For the tzatziki, coarsely grate the cucumber. Salt it to release water. Squeeze out all the excess water. Mix the cucumber with yogurt, lemon juice, chopped herbs, and crushed garlic. Drizzle with olive oil and season with salt and pepper. Chill in the refrigerator.
- 3Cut the tomatoes into quarters, and the cucumber into slices. Mix with olives, crumbled feta cheese, and chopped red onion. Drizzle with olive oil and lemon juice. Season with pepper, dried oregano, and basil.
- 4Grill the whole chicken meat quickly on a hot grill - 5-7 minutes on each side, depending on the thickness of the meat. Then slice the meat. Serve with vegetables and toasted pita bread in a shared bowl.
