INGREDIENTS
- 1 kg pork tenderloin
- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- 1 tablespoon sweet paprika
- 1 teaspoon ground turmeric
- 1 teaspoon oregano
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground cinnamon
- 1 teaspoon salt
- 5 cloves garlic, chopped
- 60 ml extra virgin olive oil
- Juice of 1/2 lemon for marinade
- Lemon slices for garnish
INSTRUCTIONS
- 1Clean the pork tenderloin of excess fat and then cut it into cubes about 4 cm in size and place them in a large freezer bag.
- 2In a bowl, mix all the spices, olive oil, and lemon juice, then pour the resulting mixture over the pork cubes.
- 3Seal the bag and mix the seasoning mixture with the pork, then marinate in the refrigerator overnight (or at least 2 hours).
- 4Remove the marinated pork cubes and skewer them on metal skewers with a little space between each cube.
- 5Grill on high heat until the meat is seared on the outside but still just cooked through on the inside (do not overcook, or the meat will be dry!).
- 6Let the skewers rest for five minutes and serve with lemon slices.
