INGREDIENTS

  • 1 kg pork tenderloin
  • 1 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • 1 tablespoon sweet paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon oregano
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 5 cloves garlic, chopped
  • 60 ml extra virgin olive oil
  • Juice of 1/2 lemon for marinade
  • Lemon slices for garnish

INSTRUCTIONS

    Clean the pork tenderloin of excess fat and then cut it into cubes about 4 cm in size and place them in a large freezer bag.

    In a bowl, mix all the spices, olive oil, and lemon juice, then pour the resulting mixture over the pork cubes.

    Seal the bag and mix the seasoning mixture with the pork, then marinate in the refrigerator overnight (or at least 2 hours).

    Remove the marinated pork cubes and skewer them on metal skewers with a little space between each cube.

    Grill on high heat until the meat is seared on the outside but still just cooked through on the inside (do not overcook, or the meat will be dry!).

    Let the skewers rest for five minutes and serve with lemon slices.
