INGREDIENTS
- approx. 2 kg of meaty pork ribs for grilling
- ½ cup of brown sugar
- ½ cup of red wine vinegar
- 6 cloves of garlic
- 1 teaspoon of smoked red paprika
- 2 teaspoons of dried oregano
- 1 tablespoon of ground cumin
- Cayenne chili
- Salt
- Freshly ground black pepper
- 2 bunches of spring onions
- 500 g of baby potatoes
INSTRUCTIONS
- 1Slowly melt the sugar in a non-stick pan. Add the wine vinegar and mix. Add crushed garlic, oregano, cumin, chopped chili, and smoked paprika. Season with salt and pepper. Let it reduce to half over low heat.
- 2Wash the ribs and coat them with the marinade. Reserve 1/3 of the marinade for basting during grilling. Wrap the ribs in an airtight bag and let them marinate in the fridge for several hours, preferably overnight. Then grill for 2-2.5 hours depending on the thickness of the meat over a very low flame at 130-150 degrees. Turn the ribs and baste with the marinade during grilling.
- 3For the last 10 minutes, increase the temperature to 200 degrees and add spring onions to the grill, drizzle with olive oil, and season with salt and pepper.
- 4Boil the potatoes whole for 10 minutes and then add them to the grill for the last 10 minutes to roast.
- 5Serve the ribs with grilled spring onions and baby potatoes.
