INGREDIENTS
- 2 tomatoes
- 1/2 red bell pepper (seeded, finely chopped)
- 1/2 red onion (finely chopped)
- 2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- 4 chorizo sausages
- 4 baguettes
Chimichurri sauce
- Parsley (chopped)
- 2 cloves garlic (minced)
- 1 teaspoon dried oregano
- 1/2 teaspoon chilli flakes
- 2 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar
INSTRUCTIONS
- 1Using a small sharp knife, quarter the tomatoes. Use a spoon to remove the seeds. Finely chop the flesh and place it in a large bowl.
- 2Add bell pepper, onion, oil, and vinegar to the bowl with tomatoes, season well, then mix.
- 3For the chimichurri sauce, place all ingredients in a bowl and mix until well combined. Let it rest for 1 hour.
- 4Meanwhile, preheat a grill pan or griddle to medium heat. Cook the chorizo, turning frequently, for about 10 minutes.
- 5Slice the baguettes lengthwise, almost all the way through. Open them up and grill cut-side down for 2 minutes. Divide the chorizo among the baguettes, then top with chimichurri and the tomato mixture.
