INGREDIENTS

  • 2 tomatoes
  • 1/2 red bell pepper (seeded, finely chopped)
  • 1/2 red onion (finely chopped)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 4 chorizo sausages
  • 4 baguettes

Chimichurri sauce

  • Parsley (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chilli flakes
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar

    Using a small sharp knife, quarter the tomatoes. Use a spoon to remove the seeds. Finely chop the flesh and place it in a large bowl.

    Add bell pepper, onion, oil, and vinegar to the bowl with tomatoes, season well, then mix.

    For the chimichurri sauce, place all ingredients in a bowl and mix until well combined. Let it rest for 1 hour.

    Meanwhile, preheat a grill pan or griddle to medium heat. Cook the chorizo, turning frequently, for about 10 minutes.

    Slice the baguettes lengthwise, almost all the way through. Open them up and grill cut-side down for 2 minutes. Divide the chorizo among the baguettes, then top with chimichurri and the tomato mixture.
