INGREDIENTS
- 2 tomatoes
- 1/2 red bell pepper (seeded, finely chopped)
- 1/2 red onion (finely chopped)
- 2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- 4 chorizo sausages
- 4 baguettes
Chimichurri Sauce
- Parsley (chopped)
- 2 cloves garlic (crushed)
- 1 teaspoon dried oregano
- 1/2 teaspoon chili flakes
- 2 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar
INSTRUCTIONS
- 1With a small sharp knife, cut the tomatoes into quarters. Use a spoon to remove the seeds. Chop the flesh finely and place it in a large bowl.
- 2Add the bell pepper, onion, oil, and vinegar to the bowl with the tomatoes, season well, and then mix.
- 3For the chimichurri sauce, place all the ingredients in a bowl and stir until well combined. Let it rest for 1 hour.
- 4Meanwhile, preheat a grill pan or griddle to medium heat. Cook the chorizo, turning frequently, for about 10 minutes.
- 5Slice the baguettes lengthwise until almost cut through. Open and grill cut-side down for 2 minutes. Divide the chorizo among the baguettes, top with chimichurri and tomato mixture.
