INGREDIENTS
- 500 g fresh or frozen apricots
- 1 teaspoon vanilla extract or 1 vanilla pod
- 80 g chicory syrup
- Fresh mint for garnish
INSTRUCTIONS
- 1For the sorbet, use well-ripened fruit. Wash the apricots and remove the pits. Cut each apricot into eighths and place everything into a freezer bag. Put it in the freezer and let the apricots freeze completely.
- 2These prepared apricots can then be used at any time to make a quick sorbet. Prepare a countertop blender, into which you place the frozen apricots along with vanilla extract and chicory syrup. If the mixture is too sour, add more chicory syrup to taste. Blend everything together until smooth and serve immediately.
