INGREDIENTS
- 2 kg tomatoes
- 2 apples (approx. 300g)
- 2 onions (approx. 300 g)
- 10 cloves
- 10 whole allspice
- 10 whole black pepper
- 5 bay leaves
- 100 g brown cane sugar
- 80 ml apple cider vinegar
- 1 tablespoon sweet ground paprika
- 1 tablespoon salt
INSTRUCTIONS
- 1Wash the vegetables. Cut the tomatoes into quarters. Cut the apples into quarters, remove the core, and cut them into smaller pieces. Peel the onion and also cut it into quarters.
- 2Place the prepared vegetables into a pot, add cloves, allspice, pepper, and bay leaves. Cook on medium heat for approximately 45 minutes, stirring occasionally.
- 3Blend the mixture with a hand blender and then strain it. Return it to the pot. Add sugar, apple cider vinegar, ground paprika, and salt. Cook on the lowest heat for approximately 4 hours or until the ketchup reaches the desired thickness. Use a plate test by taking a spoonful of ketchup onto a plate. If liquid starts to separate from the ketchup after a while, continue cooking. Finally, blend to a smooth texture.
- 4Fill the finished ketchup into sterilized jars and process for 20 minutes at 85 °C.
