Ingredients
- 2 eggs
- 150 g kefir
- 40 g ghee
- 80 g brown sugar
- 1 teaspoon vanilla extract
- 210 g spelt semicoarse flour
- 6 g baking powder
- 6 g baking soda
- 110 g carrot
For the Cream
- 225 g firm curd
- 75 g whipping cream
- 45 g powdered sugar
- 20 g dark chocolate
Instructions
- 1Turn on the oven to top and bottom heat and set it to 170 °C.
- 2Clean the carrots and grate them finely. Crack the whole eggs into a bowl, add the carrots and other ingredients. Mix with a wooden spoon into a smooth batter, which is then filled into the cups. With a cup base size of 5 cm, the batter makes 12 pieces.
- 3Bake in a preheated oven for 25-30 minutes. Check if they are done with a skewer. Remove them onto a rack and let them cool.
- 4Meanwhile, whip the curd with cream and sugar and chill in the fridge. Using a piping bag with a wide round pastry tip, create ghosts (just like making meringues).
- 5Melt the chocolate in a water bath, fill a piping bag with it, and cut just a small piece of the tip to create a small opening. Squeeze small chocolate balls onto food wrap, which will be used as eyes for the ghosts. Let them harden, carefully peel them off, and decorate the cupcakes with them.
