- 260 g zucchini
- 3 eggs
- 90 g brown sugar or other sweetener
- 150 g yogurt
- 50 g ghee
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 200 g semi-coarse spelt flour
- 30 g Dutch cocoa
Instructions
- 1Grate the zucchini on a fine grater. Let it sit for 10 minutes, then squeeze out the excess liquid with your hands. Approximately 135 g of zucchini will remain.
- 2Turn on the oven to top and bottom heat and set to 170 °C.
- 3Grease the pan with butter and dust with flour.
- 4Crack the eggs and separate the whites. Whisk the whites into stiff peaks. Whisk the yolks with sugar until light and foamy. Add yogurt, zucchini, and ghee and mix. Add the dry ingredients and mix. Finally, fold in the egg whites. Pour the batter into the pan, smooth the surface, and place in the oven. Bake for 40-45 minutes. Use a skewer to check if the bread is baked through.
