- 260 g zucchini
- 3 eggs
- 90 g brown sugar or other sweetener
- 150 g yogurt
- 50 g ghee
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 200 g semi-coarse spelt flour
- 30 g Dutch cocoa
Instructions
- 1Grate the zucchini on a fine grater. Let it sit for 10 minutes, then squeeze out the excess liquid by hand. You will have approximately 135 g of zucchini left.
- 2Preheat the oven to 170 °C with top and bottom heat.
- 3Grease the baking form with butter and dust with flour.
- 4Crack the eggs and separate the whites. Beat the whites until stiff peaks form. Beat the yolks with sugar until light and fluffy. Add yogurt, zucchini, and ghee, and mix. Add the dry ingredients and mix. Finally, fold in the beaten egg whites. Pour the batter into the form, smooth the surface, and place in the oven. Bake for 40-45 minutes. Use a skewer to check if the bread is cooked through.
