Ingredients
- 2 medium bananas
- 2 eggs
- 300 g plain yogurt
- 60 g butter (melted)
- 2 tablespoons lemon juice
- 180 g all-purpose wheat flour
- 30 g Dutch cocoa
- 100 g granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 100 g white chocolate
Instructions
- 1Preheat the oven to 180 °C and prepare 12 silicone muffin molds.
- 2Peel the bananas and mash them into a puree with a fork in a large bowl. Add 2 eggs, yogurt, melted butter, and lemon juice to the mashed bananas and mix. Then add flour, Dutch cocoa, sugar, baking powder, and baking soda, and whisk the contents of the bowl into a smooth batter.
- 3Chop the white chocolate into small pieces and mix into the batter. However, mix the batter as little as possible to avoid overmixing.
- 4Pour the finished batter into the prepared molds, place them in the preheated oven, and bake for 30–35 minutes at 175–180 °C.
- 5Remove the baked muffins from the oven and let them cool in the molds for 10 minutes. Then remove them from the molds, let them cool for approximately 1 more hour, and serve.
