Ingredients

  • 2 medium bananas
  • 2 eggs
  • 300 g plain yogurt
  • 60 g butter (melted)
  • 2 tablespoons lemon juice
  • 180 g all-purpose wheat flour
  • 30 g Dutch cocoa
  • 100 g granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 100 g white chocolate

Instructions

    Preheat the oven to 180°C and prepare 12 silicone muffin molds.

    Peel the bananas and mash them into a puree in a large bowl using a fork. Crack 2 eggs into the mashed bananas, add yogurt, melted butter, and lemon juice, and mix. Then add flour, Dutch cocoa, sugar, baking powder, and baking soda, and whisk the contents of the bowl into a smooth batter.

    Chop the white chocolate into small pieces and fold it into the batter. Stir the batter as little as possible to avoid overmixing.

    Pour the finished batter into the prepared molds, place them in the preheated oven, and bake for 30–35 minutes at 175–180°C.

    Remove the baked muffins from the oven and let them cool in the molds for 10 minutes. Then remove them from the molds, let them cool for approximately 1 hour, and serve.
