- Puff pastry
- 100 g Gouda
- 1 medium yellow onion
- 200 g sour cream
- 150 g cream cheese
- 3 eggs
- ¼ teaspoon nutmeg
- 150 g thawed spinach
- 2 cloves garlic
Instructions
- 1Grate the Gouda on a fine grater. Peel and finely chop the onion.
- 2Preheat the oven to 170 °C and prepare a pie dish with a diameter of approximately 25 cm, lining it with baking paper.
- 3Dust the work surface with 20 g of plain flour, place the puff pastry on the floured surface, and roll it out with a rolling pin into a square about 2–3 mm thick. Line the pie dish with the resulting pastry sheet so that the edges reach a height of at least 2 cm and the corners of the square overhang the dish.
- 4Now prepare the filling: In a medium bowl, mix sour cream, cream cheese, and 2 eggs. Then add the grated Gouda, chopped onion, nutmeg, and spinach to the bowl, then press the garlic into the bowl and mix everything. Season the resulting mixture with salt and pepper.
- 5Pour the contents of the bowl into the pastry-lined dish and fold the overhanging pastry corners over it.
- 6In a small bowl, mix 1 egg with 1 tablespoon of water and brush the pastry in the dish with the resulting mixture.
- 7Place the dish in the oven and bake for 48–52 minutes at 170–175 °C.
- 8After baking, let the pie cool for at least 30 minutes. After this time, cut it into 8 portions and serve.
