  • Puff Pastry
  • 100 g Gouda
  • 1 medium yellow onion
  • 200 g sour cream
  • 150 g cream cheese
  • 3 eggs
  • ¼ teaspoon ground nutmeg
  • 150 g thawed spinach
  • 2 cloves garlic

Instructions

    Grate the Gouda cheese on a fine grater. Peel and finely chop the onion.

    Preheat the oven to 170 °C and prepare a pie dish with a diameter of approximately 25 cm, lining it with baking paper.

    Sprinkle 20 g of plain flour on the work surface, place the puff pastry on the floured surface, and roll it out into a square about 2⁠–⁠3 mm thick. Line the pie dish with the rolled-out pastry so that the edges reach at least 2 cm high and the corners of the square hang over the dish.

    Now prepare the filling: In a medium-sized bowl, mix sour cream, cream cheese, and 2 eggs. Then add the grated Gouda, chopped onion, nutmeg, and spinach to the bowl, press the garlic into the bowl, and mix everything together. Season the resulting mixture with salt and pepper.

    Pour the contents of the bowl into the pastry-lined dish and fold the overhanging corners of the pastry over it.

    In a small bowl, mix 1 egg with 1 tablespoon of water and brush the pastry in the dish with the resulting mixture.

    Place the dish in the oven and bake for 48⁠–⁠52 minutes at 170⁠–⁠175 °C.

    After baking, let the pie cool for at least 30 minutes. After this time, cut it into 8 portions and serve.
