Ingredients

  • 30 g butter
  • 30 g finely grated coconut
  • 400 g semi-coarse flour
  • 12 g baking powder
  • 37 g vanilla pudding powder
  • 100 g granulated sugar
  • 1 egg
  • 220 ml semi-skimmed milk
  • 70 ml sunflower oil
  • 300 g fresh pitted cherries

Instructions

    Melt the butter ⁠–⁠ you can place it in a bowl and heat it for 30⁠–⁠60 seconds in the microwave at 750 W or melt it on the stove in a saucepan (2⁠–⁠3 minutes on low heat will suffice).

    Preheat the oven to 180⁠–⁠185 °C, prepare a baking dish measuring 27 cm × 35 cm, grease it with melted butter, and sprinkle with grated coconut.

    Take a large bowl, add the semi-coarse flour, baking powder, vanilla pudding powder, and sugar, and mix everything together. Add the eggs, milk, and sunflower oil to the mixture and work into a thinner batter.

    Pour the finished batter into the prepared baking dish and spread it evenly over the bottom. Then evenly sprinkle the batter with cherries, gently pressing them into the batter.

    Place the baking dish with the batter into the preheated oven and bake for 35⁠–⁠40 minutes at 180⁠–⁠185 °C until the surface of the batter turns golden brown.

    Remove the baking dish from the oven and let the bubble cake cool in the dish for at least 45 minutes.

    After cooling, cut the bubble cake into 12 servings and serve.
