Ingredients

  • 500 g all-purpose wheat flour
  • 2 teaspoons dried yeast

    In a large bowl, mix all ingredients and knead into a compact dough.

    Cover the bowl with the dough with a kitchen towel and let it rise on the work surface for 2⁠–⁠2.5 hours, until the dough doubles in volume.

    Approximately 30 minutes before the end of rising, preheat the oven to 230 °C and at the same time place an oven-safe dish with a lid (approx. 15 cm × 20 cm), into which the bread will fit, into the oven to heat up. Instead of a dish, a pot with a lid suitable for the oven can also be used.

    After the dough has risen, spread baking paper on the work surface and dust it with a little flour. Turn the dough out onto the paper and carefully shape it into a round loaf with as few movements as possible. The dough should be sticky ⁠–⁠ do not add more flour, otherwise the bread would lose its fluffiness.

    Remove the heated baking dish from the oven and place the loaf, along with the baking paper, inside. Cover the dish with the lid and bake for 30 minutes at 225⁠–⁠230 °C.

    After the specified time, remove the lid from the dish and bake the bread for another 10⁠–⁠12 minutes, until golden brown.

    Remove the baked bread from the oven and let it cool for 30⁠–⁠60 minutes. Then slice it and serve.
Tip
You can also let the dough rise overnight in the refrigerator (8–12 hours). After removing it from the refrigerator, immediately transfer it to the heated dish and bake according to the other instructions in the procedure.
