  • 300 g raw potatoes (type C for cooking)
  • 200 g red onion (yellow can be used)
  • 30 g spring onion
  • 2 medium-sized eggs
  • 1 tablespoon dried oregano
  • 50 g corn breadcrumbs
  • Salt
  • Pepper

INSTRUCTIONS

    First, preheat the oven to 180⁠–⁠185 °C and prepare a baking tray (30 cm × 40 cm) lined with baking paper.

    Peel the potatoes and grate them coarsely into a large bowl. Peel the red onion and slice it thinly, chop the spring onion into rings, and add both to the bowl with the potatoes. Crack 2 eggs into the bowl, add oregano, corn breadcrumbs, salt, and pepper, and mix the entire mixture.

    From the resulting dough, start forming pancakes on the tray with a diameter of about 8⁠–⁠9 cm and a height of 0.5⁠–⁠1 cm. Once you have used all the dough, place the tray in the oven and bake the pancakes for 25⁠–⁠30 minutes at 180⁠–⁠185 °C.
