INGREDIENTS
- 75 g butter
- 100 g coconut
- 2 eggs
- 100 g cane sugar
- 13 g baking powder
- Juice from 1 small orange + orange zest
- 250 g all-purpose flour
- Powdered sugar for coating
INSTRUCTIONS
- 1Whisk room temperature butter with cane sugar.
- 2Then add eggs and whisk until foamy. Lightly mix in flour, shredded coconut, baking powder, orange juice, and orange zest. Mix everything together and knead into a consistent dough.
- 3Chill in the refrigerator for at least 3 hours, preferably overnight.
- 4Then roll small balls of dough, about 2cm in diameter, coat them in powdered sugar, and bake in a preheated oven at 170°C for 20-25 minutes. We make these cookies just before Christmas so they are fresh and soft.
