INGREDIENTS

  • 700 g beef sirloin
  • 250 g mushrooms
  • 1 yellow onion
  • 100 g butter
  • 4 tablespoons tomato paste
  • 2 tablespoons Dijon mustard
  • 200 g sour cream
  • 1 tablespoon all-purpose flour
  • 300 ml broth
  • 500 g Tagliatelle pasta
  • Salt
  • Freshly ground black pepper
  • 1 handful flat-leaf parsley

INSTRUCTIONS

    Heat 2 tablespoons of butter in a pan over medium heat. Add the beef cut into thin, approximately five-centimeter slices and fry until beautifully browned on all sides. Meanwhile, season with salt and pepper to taste. Then remove the meat from the pan and set aside.

    On the remaining butter in the same pan, sauté the chopped onion until it becomes translucent. Add the sliced mushrooms and continue frying until they start to soften.

    Return the meat to the pan and add the tomato paste and Dijon mustard. Mix well. Pour in the broth and let it simmer covered on low heat for about 30 minutes.

    Mix the sour cream with flour and finally add it to the meat mixture. Then cook together for 3 minutes. Add chopped parsley and season with salt and pepper if necessary. Serve with cooked Tagliatelle.
