First, preheat the oven to 180 °C and prepare a baking dish (20 cm × 30 cm), lining it with baking paper.

Now prepare the filling: Pit the plums, cut them into sixths, and transfer them to a small bowl. Then add forest fruit and cinnamon to the plums, mix everything, and set aside.

Next, prepare the dough: Gradually crack all 5 eggs, placing the yolks into a medium-sized bowl, while placing the whites into a taller mixing container. Then add 60 g of cane sugar to the bowl with the yolks and whisk this mixture until foamy. Whisk the egg whites in the mixing container until almost stiff peaks form, then gradually add the remaining 30 g of cane sugar and continue whisking until a stiff, glossy meringue forms. Now, in a larger bowl, mix the spelt flour, ground almonds, and baking powder, add the yolk foam to the resulting mixture and mix – you will get a denser dough, into which carefully fold in the egg white meringue in several batches.
