Ingredients

  • 5 eggs
  • 90 g brown sugar
  • 60 g whole grain spelt flour
  • 120 g ground almonds
  • 1 teaspoon baking powder

For the Filling

  • 300 g fresh plums
  • 200 g frozen forest fruits
  • 1 teaspoon ground cinnamon

Instructions

    First, preheat the oven to 180 °C and prepare a baking dish (20 cm × 30 cm) lined with baking paper.

    Now prepare the filling: Pit the plums, cut them into sixths, and transfer them to a smaller bowl. Then add the forest fruits and cinnamon to the plums, mix everything together, and set aside.

    Next, prepare the batter: Gradually crack all 5 eggs, placing the yolks in a medium-sized bowl and the whites in a tall mixing container. Add 60 g of brown sugar to the bowl with the yolks and whisk this mixture into a foam. Whisk the egg whites in the mixing container until almost stiff, then add the remaining 30 g of brown sugar and continue whisking until a stiff, glossy meringue forms. In a larger bowl, mix the spelt flour, ground almonds, and baking powder, then add the yolk foam to the resulting mixture and mix – you will get a denser batter, into which you carefully fold the meringue in several batches.

    Pour the finished batter into the lined baking dish and spread the prepared fruit filling on top. Place the dish in the oven and bake for 30–35 minutes at 170–180 °C.

    After the specified time, remove the dish, cover the cake with aluminum foil, return it to the oven, and bake for another 8–10 minutes until golden.

    Let the baked cake cool for a while, then divide it into 6 portions and serve.
