First, preheat the oven to 180 °C and prepare a baking sheet, lining it with parchment paper.
Peel the peaches, cut them in half, and place them on the baking sheet cut-side up. Then, in a small bowl, mix ground almonds with rolled oats, honey, coconut oil, cinnamon, and baking powder. Spread the resulting mixture onto the peaches, place the baking sheet in the oven, and bake for 20–25 minutes at 170–180 °C.
Meanwhile, prepare the glaze: In a small saucepan, mix milk with pudding powder and honey, and heat over low to medium heat for 3–5 minutes until the mixture thickens. Divide the resulting cream into 4 bowls.
Chef's tip
Before serving, you can garnish the peaches with a fresh mint leaf.
