Ingredients
- 100 g yellow onion
- 500 g oyster mushrooms
- 2 tablespoons butter
- 1 tablespoon ground sweet paprika
- 1 tablespoon whole grain spelt plain flour
- 400 ml vegetable broth
- 300 g whole grain couscous
- 50 ml cooking cream

Instructions
- 1Peel and finely chop the onion, and tear the oyster mushrooms into long strips.
- 2Now, in a large pot, heat 2 tablespoons of butter over medium heat, add the chopped onion and sauté for 3–4 minutes over medium heat. Then add the torn oyster mushrooms to the pot and sauté everything for another 2–3 minutes over medium heat. Next, add the ground paprika and spelt flour to the pot and sauté for another 1 minute over medium heat. Finally, add salt, pepper, and 400 ml of vegetable broth to the pot, reduce the heat to low, and cook the entire mixture for 12–14 minutes.
- 3Meanwhile, bring 500 ml of water to a boil separately and pour the couscous into a medium-sized bowl. Then pour the boiling water over the couscous, cover it with a lid, and let it stand.
- 4After 12–14 minutes of cooking the oyster mushroom mixture, pour 50 ml of cooking cream into the pot, increase the heat to medium, and cook everything for another 2–3 minutes. Then turn off the heat, divide the oyster mushroom paprikash into 4 plates, and serve each portion with the prepared couscous.
