INGREDIENTS

  • 600 g raw sweet potatoes
  • 120 g yellow onion
  • 4 cloves of garlic
  • 3 tablespoons sunflower oil
  • 500 g ground beef (max. 10% fat)
  • 440 g canned peeled chopped tomatoes
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons dried basil
  • 70 g Parmesan
  • 400 g cottage cheese
  • 1 medium egg
  • Salt
  • Pepper

INSTRUCTIONS

    First, peel the sweet potatoes and slice them lengthwise into 0.5 cm thick slices. Peel and finely chop the onion and garlic. Preheat the oven to 180⁠–⁠185 °C and prepare a deep baking dish measuring 25 cm × 30 cm.

    Now take a pan, heat 3 tablespoons of sunflower oil in it, add the chopped onion and garlic, and sauté for 2⁠–⁠3 minutes over medium heat. Then add the ground beef to the pan and sauté everything for another 7⁠–⁠8 minutes over medium heat. Next, add the canned tomatoes, oregano, thyme, basil, salt, and pepper to the pan and cook the entire mixture for 5⁠–⁠6 minutes over medium heat.

    Meanwhile, finely grate the Parmesan, place it in a bowl, and mix it with the cottage cheese, egg, salt, and pepper.

    Remove the cooked meat mixture from the heat and start assembling the lasagna: Place ½ of the total amount of sweet potato slices on the bottom of the prepared baking dish, add ½ of the meat mixture, and spread ½ of the cottage cheese mixture over the meat. Repeat this entire process once more. Place the prepared lasagna in the oven and bake for 45⁠–⁠50 minutes at 180⁠–⁠185 °C.
