INGREDIENTS

  • 1 small broccoli (approx. 400 g)
  • 250 g whole wheat spaghetti, dry
  • 2 cloves of garlic
  • 50 g grated Parmesan
  • 50 g walnuts (or cashews)
  • 50 ml olive oil
  • 30 g fresh baby spinach
  • 20 g fresh basil
  • Juice of 1 small lemon
  • Salt
  • Pepper

INSTRUCTIONS

    First, wash the broccoli and separate it into florets and the stem. Cut the florets into small pieces and peel and dice the stem into smaller cubes.

    Now pour water into a large pot, salt it, and bring it to a boil over high heat. Then add the spaghetti to the pot, reduce the heat to medium, and cook for 10 minutes.

    While the spaghetti is cooking, prepare the pesto: Peel the garlic, place it in a blender, and add grated Parmesan, walnuts, olive oil, baby spinach, basil, lemon juice, chopped broccoli stem, salt, pepper, and ½ of the total amount of broccoli florets. Then blend the contents of the blender and season the resulting mixture with salt and pepper as needed.

    After 10 minutes of cooking the spaghetti, add the remaining broccoli florets to the pot and cook them together with the spaghetti for 1–2 minutes over medium heat.

    Finally, drain the pasta with broccoli, mix it with the prepared pesto, divide it into 5 plates, and serve.
