INGREDIENTS
- approx. 600 g tofu
- approx. 500 g broccoli
- 1 bunch of spring onions
- 5 cloves of garlic
- 125 g baby spinach
- Fresh ginger about 2 inches in size
- 2 teaspoons of red chilli paste
- 10 tablespoons of soy sauce
- 3 tablespoons of brown sugar
- 4 tablespoons of sesame oil
- Juice of 1 lime
- Black and white sesame seeds for sprinkling
- 250 g jasmine rice
INSTRUCTIONS
- 1Cut the tofu into cubes. In a bowl, mix soy sauce, 10 tablespoons of water, 2 tablespoons of sesame oil, finely chopped ginger, 2 crushed cloves of garlic, lime juice, and brown sugar. Pour this mixture over the tofu and let it marinate in the fridge for at least an hour.
- 2Divide the broccoli into small florets and boil for 3 minutes in salted water. Cook the rice according to the instructions.
- 3Heat 2 tablespoons of oil in a pan/wok, toss in sliced spring onions and 3 cloves of sliced garlic for about 30 seconds. Then add the tofu and broccoli, stir-fry very quickly for 3-4 minutes.
- 4Finally, add the spinach and remove from the heat. The spinach will wilt and lose its volume. Sprinkle with sesame seeds and serve with rice.
