Ingredients
- 600 g kimchi
- 250 g Mie noodles
- 1 bunch spring onion approx. 100 g
- 4 cloves garlic
- 1 handful Thai basil
- 1 cayenne chili pepper
- 4 tablespoons red chili paste
- 2 tablespoons sunflower oil
- 2 tablespoons sesame oil
- 1 tablespoon butter
- Salt
- Freshly ground black pepper
Instructions
- 1Slice the spring onion into rounds and the peeled garlic into thin slices. Sauté them together in olive oil. Then add the chopped chili pepper, oyster mushrooms cut into smaller pieces, and 2 tsp of red chili paste. Let them release their aroma. Add kimchi, 2/3 of the torn basil, and pour in 750 ml of water. Season with salt and pepper. Cook together over low heat for 20 minutes.
- 2Meanwhile, sauté shiitake and shimeji mushrooms in butter. Season with salt and pepper and set aside. Soak the noodles in 80-degree water for 10 minutes. Then drain, add sesame oil and 2 tsp of red chili paste. Quickly sauté them in a hot pan for a short while.
- 3Serve the kimchi soup with noodles, buttered mushrooms, and fresh basil.
