INGREDIENTS
- 250 g ricotta
- 150 g plain flour
- 3 eggs size M
- 150 ml milk
- 1 baking powder with cream of tartar (10 g)
- 50 g brown cane sugar
- 1 vanilla sugar
- 1 teaspoon ground cinnamon
- Ghee for frying
- 125 g blueberries
- Powdered sugar for sprinkling (optional)
INSTRUCTIONS
- 1Separate the egg yolks from the whites. Whisk the egg whites until stiff.
- 2Mix the yolks with sugar and add flour mixed with baking powder and cinnamon.
- 3Add ricotta, pour in the milk, and whisk together. Finally, gently fold in the whipped egg whites.
- 4Fry on ghee over a low flame until the pancakes are golden and cooked through.
- 5Serve with blueberries, sprinkled with powdered sugar.
