INGREDIENTS

  • 250 g ricotta
  • 150 g plain flour
  • 3 eggs size M
  • 150 ml milk
  • 1 baking powder with cream of tartar (10 g)
  • 50 g brown cane sugar
  • 1 vanilla sugar
  • 1 teaspoon ground cinnamon
  • Ghee for frying
  • 125 g blueberries
  • Powdered sugar for sprinkling (optional)

INSTRUCTIONS

    Separate the egg yolks from the whites. Whisk the egg whites until stiff.

    Mix the yolks with sugar and add flour mixed with baking powder and cinnamon.

    Add ricotta, pour in the milk, and whisk together. Finally, gently fold in the whipped egg whites.

    Fry on ghee over a low flame until the pancakes are golden and cooked through.

    Serve with blueberries, sprinkled with powdered sugar.
