INGREDIENTS

  • 1 small onion
  • 180 ml cooking cream
  • 20 g hard aged cheese for the sauce + for sprinkling
  • 120 – 140 g orzo
  • 250 g frozen raw shrimp size 26/30
  • 400 g asparagus
  • 2 cloves of garlic
  • 1 tablespoon olive oil
  • 1 lemon
  • A pinch of dried chili
  • Salt
  • Ground pepper

INSTRUCTIONS

    Chop the onion finely, slice the garlic, and fry in a tablespoon of oil until translucent. Add the shrimp and sauté for 8-10 minutes. Once the shrimp are done, add the cooking cream and grated cheese. Cook on low heat for a minute or two until the ingredients combine into a smooth sauce.

    Meanwhile, bring water to a boil for the asparagus. Salt it. Prepare another container with cold water, you can add a few ice cubes. Break off the woody bottom part of each asparagus stalk. Place the prepared asparagus in the boiling water, reduce the heat, and cook for 2-4 minutes depending on the thickness of the asparagus. The asparagus should remain firm and crunchy. After cooking, immediately place it in the container with cold water. Let it cool and cut it into 2-3 cm pieces. Add these to the sauce with the shrimp.

    Finally, cook the orzo according to the package instructions. After cooking, drain the orzo and immediately add it to the sauce. Stir, season with salt, ground pepper, and dried chili. Serve with lemon.
