INGREDIENTS
- 8 pcs wheat tortillas
- 200 g wood-smoked bacon
- 1 pc red onion
- 8 pcs eggs size M
- 200 g Cheddar cheese
- 1 handful fresh coriander
- 500 g cherry tomatoes
- 4 leaves lettuce
- 2 tablespoons Jalapeno
- 3 tablespoons Mexican salsa
- 200 g beans in lightly salted brine, Mexican spice mix
- Olive oil
- Salt
- Freshly ground black pepper
INSTRUCTIONS
- 1First, prepare the ingredients. Cut the bacon into small pieces. Peel the red onion and chop it finely. Halve or quarter the cherry tomatoes, depending on their size. Grate the Cheddar cheese. Finely chop the fresh coriander. Cut the jalapeno into small pieces.
- 2Heat a pan and fry the bacon until crispy. Whisk the eggs, season with salt and pepper. Remove half of the bacon and make an omelet from half of the eggs, finally sprinkling with some cheddar. Then make the second omelet. This is so that the omelet is not too thick. Finally, cut the omelets into strips.
- 3Mix the tomatoes with olive oil, onion, and coriander. Season with salt and pepper. Mix the beans with Mexican salsa.
- 4Fill the tortillas with torn lettuce, add the tomato and bean mixture, egg omelet, jalapeno to taste, and sprinkle with more cheddar. Roll up the tortillas and bake, preferably on a contact grill.
