INGREDIENTS

  • 500 g macaroni pasta
  • 250 g Cheddar cheese
  • 250 g Gouda cheese
  • 100 g grated Parmesan
  • 175 g fresh cream cheese
  • 50 g butter
  • 3 tablespoons all-purpose flour
  • 2 teaspoons smoked paprika
  • 750 ml milk
  • Salt
  • Olive oil
  • Freshly ground white pepper
  • Handful of chopped parsley

INSTRUCTIONS

    Cook the pasta in salted water for 3 minutes less than stated on the package. After cooking, drizzle with oil and mix.

    Finely grate the Cheddar and Gouda. In a non-stick pan, melt the butter, add the flour, and make a roux. Pour in the milk and whisk. Add smoked paprika, salt, and pepper.

    Then gradually add the cheese and let it melt. Use ¾ of each hard cheese for the sauce, set the rest aside. Finally, stir in the fresh cheese. If the sauce is too thick, thin it with milk. Pour the sauce over the pasta and mix.

    Grease a baking dish with oil and spread the pasta into it. Sprinkle with the remaining cheese and bake in a preheated oven at 250 degrees Celsius for 7-8 minutes. Serve with freshly chopped parsley.
