INGREDIENTS
- 3 salmon fillets with skin (3× 150 g)
- 200 g green bean pods (can use frozen)
- 1 handful of fresh parsley
- Salt
- Pepper
- 400 g raw potatoes (cooking type C)
INGREDIENTS FOR GARLIC BUTTER
- 2 cloves of garlic
- 50 g butter (melted)
- 1 tablespoon dried dill (optional)
- Zest of ½ small lemon (finely grated) + juice of ½ small lemon
YOU WILL ALSO NEED
- Baking paper
INSTRUCTIONS
- 1First, preheat the oven to 190–195 °C and prepare a baking dish (20 cm × 30 cm) lined with baking paper.
- 2Peel the potatoes and cut them into cubes about 2 cm × 2 cm in size. Transfer the chopped potatoes to the prepared baking dish, season with salt and pepper, place in the oven, and bake for 15–20 minutes at 190–195 °C.
- 3Meanwhile, prepare the garlic butter: Peel the garlic, finely grate it into a small bowl, and mix with melted butter, dried dill, lemon zest, and juice. Then wash the salmon, clean it, and season each fillet with salt and pepper.
- 4Once the potatoes are done, remove the baking dish from the oven and reduce the oven temperature to 170–175 °C. Add the green beans to the dish with the potatoes, pour in half of the garlic butter, and mix. Then place the salmon fillets on the vegetables and brush with the remaining butter. Return the dish to the oven and bake for 12–14 minutes at 170–175 °C. Meanwhile, finely chop the parsley.
- 5After baking, sprinkle the dish with chopped parsley, divide into 3 servings, and serve.
Tip
You can place a slice of lemon on each salmon fillet before serving.
