INGREDIENTS

  • 400 g canned chickpeas (240 g drained)
  • 60 g almond flour (ground almonds)
  • 20 g fine oats
  • 80 g honey in liquid form
  • 30 g butter or coconut oil (softened)
  • 3–4 tablespoons of water
  • 60 g dark chocolate (min. 70%)

INSTRUCTIONS

  • 1
First, prepare a small baking sheet that fits in your freezer and line it with baking paper.
  • 2
Then start preparing the dough for the balls: Drain the chickpeas and rinse them under cold water. Place the rinsed chickpeas in a blender, add almond flour, oats, honey, and softened butter, and blend everything until smooth. Work 3–4 tablespoons of water into the resulting mixture to ensure the ingredients combine well and the dough is pliable.
  • 3
From the finished dough, start forming balls weighing approximately 30–35 g on the lined baking sheet (you should get about 12 balls). Once you have used all the dough, place the sheet in the freezer for at least 2 hours to let the balls harden.
  • 4
After the specified time, remove the sheet from the freezer and melt the chocolate: Prepare a pot and a glass or stainless steel bowl that can be inserted into the pot without touching its bottom. Pour a small amount of water into the pot and bring it to a gentle boil; meanwhile, break the chocolate into the bowl. Once the water in the pot starts boiling, reduce the heat to a low setting, carefully insert the bowl with the chocolate into the pot (the bottom of the bowl should not touch the water), and let the chocolate slowly melt over the hot steam while stirring constantly. Use a spoon to pour the melted chocolate over the hardened balls.
  • 5
Serve the finished balls immediately or store them in the freezer, where they will last for 3–4 months.
