INGREDIENTS
- 200 g fresh broccoli
- 1 medium red bell pepper (approx. 150 g)
- 2 cloves of garlic
- 2 tablespoons olive oil
- 6 eggs size M
- Salt
- Pepper
INSTRUCTIONS
- 1First, preheat the oven to 180–185 °C and prepare a silicone mold for 12 muffins.
- 2Wash the broccoli and cut it into small florets, wash the bell pepper and cut it into small cubes, and peel and finely grate the garlic.
- 3Next, prepare a larger bowl, add the chopped broccoli, bell pepper, grated garlic, 2 tablespoons of olive oil, 6 eggs, salt, and pepper. Mix the entire contents of the bowl thoroughly with a whisk and fill the cavities in the prepared muffin mold to ¾ of their volume with the resulting mixture.
- 4Place the filled mold in the preheated oven and bake the muffins for 30–35 minutes at 180–185 °C.
- 5After baking, remove the mold, let the muffins cool for a while, and then serve.
