INGREDIENTS
- 100 g salad mix (e.g., frisée lettuce, red beet, red chard)
- 4 pcs figs
- 2 pcs limes
- 400 g salmon
- 2 tablespoons panko breadcrumbs
- 2 tablespoons grated parmesan
- 3 tablespoons peeled unsalted pistachios
- Olive oil
- Salt
- Freshly ground white pepper
- Mild chili pepper
INSTRUCTIONS
- 1Juice one lime and mix it with panko breadcrumbs, cheese, two tablespoons of olive oil, and two tablespoons of chopped pistachios. Drizzle the salmon with half of the juice from the second lime (reserve the other half for serving), season with salt and pepper. Thoroughly coat in the prepared mixture and bake at 180 degrees for 25 - 30 minutes depending on the size of the fillet. The salmon can remain pink inside.
- 2Prepare a salad on a plate, add sliced figs, sprinkle with the remaining pistachios and chopped chili pepper. Drizzle with olive oil and season with salt. Serve with the salmon. Ideally, after breaking the crust, season the salmon on the plate with more salt, pepper, and lime juice.
