INGREDIENTS
- Cooking Box – Green Curry
- 300 g (whole grain) rice
- 300 g chicken pieces
- Olive oil
INSTRUCTIONS
- 1Peel and chop the onion. Wash the vegetables, and cut the zucchini, eggplant, bell pepper, tomatoes, and cucumber into pieces.
- 2Prepare the rice according to the instructions on the package.
- 3In a large pan, heat 2 tablespoons of (olive) oil and fry the chicken and onion for 4 minutes over medium heat.
- 4Add the remaining vegetables and fry for 4 minutes over medium heat.
- 5Add the green curry paste and fry for 2 minutes over medium-high heat. Add the coconut milk and let the curry simmer for 15 minutes over low heat with a lid. The coconut milk may be too thick. Heating makes the coconut milk more liquid.
- 6Serve the green curry with rice.
