INGREDIENTS

  • 300 g of chicken (thigh) meat cut into strips
  • 300 g of whole grain rice

INSTRUCTIONS

    Peel and finely chop the garlic. Squeeze the lime juice. In a bowl, mix the chicken with 1 tablespoon of (olive) oil, 2 tablespoons of spice mix, lime juice, and 1/3 of the garlic clove. Let the chicken marinate.

    Clean the vegetables. Peel the onion and the remaining garlic, chop the onion and finely chop the garlic.

    Cut the red pepper in half. Remove seeds if necessary. Cut the zucchini in half and slice into half-moons. Dice the peppers and tomatoes. Cook the rice according to the package instructions.

    Meanwhile, heat 2 tablespoons of (olive) oil in a pan and sauté the onion, remaining garlic, chili peppers (to taste), zucchini, and pepper over medium heat for 5–6 minutes. Add the tomatoes, remaining spice mix, and 50 ml of water. Cover and simmer on low heat for 5 minutes.

    While the vegetables are simmering, heat 1 tablespoon of (olive) oil in another pan and fry the chicken according to the package instructions until golden brown and perfectly cooked.

    Serve with rice, sautéed vegetables, and piri-piri chicken.
