INGREDIENTS FOR RICE WAFFLES
- 1 cup cooked rice (can be leftover rice)
- 1/2 cup all-purpose flour
- 1/2 cup milk
- 1 egg
- 2 tablespoons vegetable oil
- 1 teaspoon baking powder
- Salt
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic powder (optional)
INGREDIENTS FOR SALMON FILLING
- 150 g smoked or fresh salmon, chopped into small pieces
- 1/4 cup chopped cilantro
- 2 tablespoons mayonnaise
- 1 tablespoon Sriracha (to taste)
INSTRUCTIONS
- 1In a large bowl, mix cooked rice, all-purpose flour, milk, egg, vegetable oil, baking powder, salt, pepper, and garlic powder. Mix well.
- 2Then preheat the waffle iron and lightly coat it with oil or butter to prevent the waffles from sticking.
- 3Pour approximately 1/2 cup of batter (1 waffle) and cook according to your iron's instructions until the waffles are golden and crispy.
- 4In a bowl, mix chopped salmon, cilantro, mayonnaise, and sriracha.
- 5Divide the waffles onto plates and top each serving with the salmon filling.
