- 100 g plain flour
- 100 g cold butter, diced
- 100 g parmesan, finely grated
- 1/4 teaspoon salt
- Pinch of cayenne pepper (optional, for mild spiciness)

INSTRUCTIONS
- 1In a bowl, mix the flour, salt, and a pinch of cayenne pepper (if using). Add the cold butter and use your fingers or a pastry spatula to work the butter into the flour until the mixture resembles coarse breadcrumbs. Stir in the grated parmesan.
- 2If the mixture is too dry, add 1 tablespoon of cold water and quickly mix to bring the dough together. Shape the dough into a ball, wrap it in cling film, and let it rest in the refrigerator for 30 minutes.
- 3Preheat the oven to 180°C. Roll out the chilled dough on a floured surface to a thickness of about 3-4 mm. Using a cutter (e.g., round or another shape), cut out the crackers. Carefully transfer the crackers to a baking sheet lined with parchment paper.
- 4Bake in the preheated oven for 10-12 minutes until the crackers are golden at the edges. After baking, let them cool completely on the baking sheet.
