INGREDIENTS
- 250 g all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper (optional)
- 150 g grated cheese (e.g., cheddar, gouda, parmesan, or a combination)
- 100 g ham or bacon, diced (optional)
- 2 eggs
- 250 ml milk
- 80 ml vegetable oil or melted butter
- 1 teaspoon Dijon mustard (optional, for extra flavor)
- 1 tablespoon chopped fresh chives or parsley (optional)
INSTRUCTIONS
- 1Preheat the oven to 180°C and grease or line a muffin tin with paper liners.
- 2In one bowl, mix the flour, baking powder, baking soda, salt, and ground pepper. Add the grated cheese and ham or bacon, if using, to the dry ingredients and mix.
- 3In another bowl, beat the eggs, add the milk, oil (or melted butter), and if using, also add Dijon mustard and chopped herbs. Mix the mixture well.
- 4Pour the wet ingredients into the dry mixture and stir until all ingredients are combined. Do not overmix to keep the muffins fluffy.
- 5Divide the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
- 6Bake the muffins in the preheated oven for 20-25 minutes until golden and a skewer or toothpick inserted into the center comes out clean.
