INGREDIENTS

  • 250 g all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper (optional)
  • 150 g grated cheese (e.g., cheddar, gouda, parmesan, or a combination thereof)
  • 100 g ham or bacon, cut into small cubes (optional)
  • 2 eggs
  • 250 ml milk
  • 80 ml vegetable oil or melted butter
  • 1 teaspoon Dijon mustard (optional, for extra flavor)
  • 1 tablespoon chopped fresh chives or parsley (optional)

INSTRUCTIONS

    Preheat the oven to 180°C and grease or line a muffin tin with paper liners.

    In one bowl, mix together the flour, baking powder, baking soda, salt, and ground pepper. Add the grated cheese and ham or bacon, if using, to the dry ingredients and mix.

    In another bowl, whisk the eggs, add milk, oil (or melted butter), and if using, also add Dijon mustard and chopped herbs. Mix the mixture well.

    Pour the wet ingredients into the dry mixture and mix until all ingredients are combined. Do not overmix to keep the muffins fluffy.

    Divide the batter evenly into the prepared muffin tin, filling each liner about two-thirds full.

    Bake the muffins in the preheated oven for 20-25 minutes, until golden brown and a skewer or toothpick inserted into the center comes out clean.
