INGREDIENTS
- 1 small yellow onion (50 g)
- 1 small green pepper (130 g)
- 2 medium tomatoes (2× 50 g)
- 5 g fresh parsley
- 2 tablespoons olive oil
- 4 eggs size M
- ½ teaspoon ground cumin (optional)
- Salt
- Pepper
INSTRUCTIONS
- 1Peel and finely chop the onion. Wash the pepper and tomatoes and cut them into small cubes. Finely chop the parsley.
- 2Now, heat 2 tablespoons of olive oil in a pan over medium heat, add the chopped onion and pepper, and sauté for 3–4 minutes over medium heat. Then add the chopped tomatoes and ground cumin and sauté everything for another 2–3 minutes over medium heat. Next, crack 4 eggs into the pan, season the entire mixture with salt and pepper, and stir continuously, cooking for 1–3 minutes over medium heat until the eggs are properly set. Once they reach the desired consistency, stir in the chopped parsley and remove the pan from the heat.
- 3Divide the finished scrambled eggs onto 2 plates and serve.
