INGREDIENTS
- 400 g tagliatelle
- 1 large organic lemon
- 4 large cloves of garlic
- 100 g grated Parmesan
- 50 g grated pecorino
- 3 tablespoons olive oil
- A handful of fresh basil
- 1 chili pepper
- Salt
- Freshly ground pepper
- Arugula
INSTRUCTIONS
- 1Cook the pasta in salted water according to the package instructions until al dente.
- 2Heat olive oil in a pan over medium heat. Add chopped garlic and chili pepper and lightly sauté until fragrant but not brown.
- 3Finely grate the zest of the lemon and then squeeze the juice. Add it to the pan along with about 3 tablespoons of the pasta cooking water. Then add the pasta and mix with the lemon zest.
- 4Sprinkle Parmesan over the hot pasta. Add chopped basil, salt, and pepper.
- 5On the plate, sprinkle with larger slices of grated pecorino and fresh arugula.
