INGREDIENTS

  • 150 g short-grain rice
  • 400 ml coconut milk
  • 4 tablespoons coconut-almond butter
  • 1 handful of fresh blueberries
  • Crunchy coconut chips
  • Milk
  • Fruit for garnish

INSTRUCTIONS

    Rinse the rice thoroughly to remove the starch. Continue rinsing until the water runs clear. Then pour it into a pot and cover with coconut milk.

    Cook for about 15 minutes until soft. Stir continuously and if necessary, add a little regular milk. Let the rice cool down.

    Then divide into bowls and add sliced apricots, blueberries, coconut chips, and especially coconut almond butter, which gives the milk rice the right flavor. Thanks to this, there is no need to add any sugar, as coconut is sufficiently sweet. However, if needed, you can flavor the rice with honey or maple syrup.
