INGREDIENTS

  • 140 - 180 g linguine or other pasta
  • 1 shallot
  • 250 ml vegetable broth
  • 50 ml cream 33%
  • 30 g nutritional yeast
  • 30 g nutritional yeast
  • 2 tablespoons oil
  • pinch of salt
  • pinch of freshly ground pepper
  • flat-leaf parsley for garnish

INSTRUCTIONS

    Wash the mushrooms, dry them with a paper towel, and cut them into thicker slices, smaller pieces into quarters or halves. Remove the dry skins from the shallot and chop finely.

    Sauté the mushrooms in a tablespoon of oil, it takes about 3 minutes until the mushroom pieces start to turn golden. Set them aside off the pan. Add oil and fry the shallot until golden, add the broth, cream, and nutritional yeast. Simmer the sauce on low heat for at least 5 minutes. Add the mushrooms. Season with ground pepper and, if necessary, add salt.

    Cook the pasta al dente according to the instructions on the package.

    Drain the cooked pasta and immediately add it to the sauce. Stir and serve immediately.
