INGREDIENTS

  • 50 g soft butter
  • 80 g granulated sugar
  • 2 eggs
  • 100 ml buttermilk
  • 10 g red food coloring
  • 100 g spelt flour
  • 10 g Dutch cocoa
  • 1 teaspoon white wine vinegar
  • 1 teaspoon baking soda
  • Pinch of salt

INGREDIENTS FOR THE CREAM

  • 250 g quark
  • 125 g mascarpone
  • 1 tablespoon powdered sugar
  • 100 g strawberries
  • Fresh mint

INSTRUCTIONS

    Turn on the oven to top and bottom heat and set to 180 °C.

    Whisk butter with sugar for at least 5 minutes, then add eggs one by one. Once the previous one is incorporated, add the next.

    Mix buttermilk with food coloring and weigh out flour with cocoa, then sift.

    Gradually add buttermilk and flour to the bowl with the dough base. Do not whisk anymore, stir with a wooden spoon; in a stand mixer, you can use a K-beater. Add a pinch of salt.

    Mix wine vinegar with baking soda. Add to the dough and stir.

    Pour the dough onto a baking sheet lined with parchment paper and spread it to a height of just under one centimeter. A sheet of 25 x 28 cm should be formed. Place in the preheated oven and bake in the middle part of the oven for 12 minutes.

    Remove and let the sheet cool.

    For the cream, whisk quark with mascarpone, sugar, and vanilla extract.

    Either crumble the sheet by hand or use an electric chopper (recommended). Alternatively, using the glass you will be filling, cut out 8 pieces from the sheet and crumble the rest.

    Place a cut-out piece or sprinkle crumbled dough at the bottom of the glass. Layer with cream, cover with another piece of dough, and layer with cream again. This works well with a piping bag with a decorating tip. Sprinkle the dessert with the remaining dough and decorate with strawberries and mint.
