INGREDIENTS
- 50 g soft butter
- 80 g granulated sugar
- 2 eggs
- 100 ml buttermilk
- 10 g red food coloring
- 100 g spelt flour
- 10 g Dutch cocoa
- 1 teaspoon white wine vinegar
- 1 teaspoon baking soda
- A pinch of salt
INGREDIENTS FOR CREAM
- 250 g quark
- 125 g mascarpone
- 1 tablespoon powdered sugar
- 100 g strawberries
- Fresh mint
INSTRUCTIONS
- 1Turn on the oven to top and bottom heat and set it to 180 °C.
- 2Beat the butter with sugar for at least 5 minutes, then add the eggs one by one. Once the previous one is beaten in, add the next.
- 3Mix the buttermilk with the coloring and weigh the flour with cocoa, then sift.
- 4Gradually add the buttermilk and flour to the bowl with the base of the dough. Do not beat, mix with a wooden spoon, or use the K beater in a mixer. Add a pinch of salt.
- 5Mix the white wine vinegar with baking soda. Add to the dough and stir.
- 6Pour the dough onto a baking sheet lined with parchment paper and spread it to a height of just under one centimeter. It should form a sheet measuring 25 x 28 cm. Place in the preheated oven and bake in the middle part of the oven for 12 minutes.
- 7Remove and let the sheet cool.
- 8For the cream, beat the quark with mascarpone, sugar, and vanilla extract.
- 9Either crumble the sheet by hand or use an electric chopper (recommended). Alternatively, you can use the glass you will be filling to cut out 8 pieces from the sheet and crumble the rest.
- 10Place a cut piece or crumbled dough at the bottom of the glass. Layer with cream, cover with another piece of dough, and layer with cream again. This works well with a piping bag with a decorating tip. Sprinkle the dessert with the remaining dough and garnish with strawberries and mint.
