Turkey Meatballs with Couscous

Preparation method
In a medium bowl, mix the ground turkey with spices and chopped vegetables, then season with salt and pepper. Form 16 meatballs from the mixture.
In a large pan, heat oil over medium heat and brown the meatballs until golden (approx. 4 minutes). Then remove them, add tomato paste to the pan and sauté for approx. 1 minute over medium to high heat, stirring constantly. Pour in the tomatoes, season with salt and pepper, mix, and simmer for 1–2 minutes. Then add the meatballs, reduce the heat to low, and cook for another approx. 15 minutes.
Meanwhile, place couscous in a small bowl, pour boiling water over it, and cover with a plate. Once the meatballs are done, uncover the couscous, season with salt, pepper, and lemon juice, and stir.
