INGREDIENTS FOR MEATBALLS

  • 400 g ground turkey meat
  • 2 teaspoons Provençal herbs
  • 20 g fresh chives (finely chopped)
  • ½ large red bell pepper (finely chopped)
  • 1 large yellow onion (finely chopped)
  • 1 tablespoon olive oil
  • Salt
  • Pepper

INGREDIENTS FOR SAUCE

  • 1 tablespoon tomato paste
  • 400 g chopped canned tomatoes
  • 1 handful fresh basil (finely chopped)
  • Salt
  • Pepper

INGREDIENTS FOR COUSCOUS

  • 100 g dry couscous
  • Juice of ½ medium lemon
  • 180 ml boiling water
  • Salt

INSTRUCTIONS

    In a medium bowl, mix the turkey meat with spices and chopped vegetables, and season with salt and pepper. Shape the mixture into 16 balls.

    In a large pan, heat oil over medium heat and fry the meatballs until golden brown (about 4 minutes). Then remove them, add the tomato paste to the pan, and fry for about 1 minute over medium to high heat, stirring constantly. Pour in the tomatoes, season with salt and pepper, mix, and cook for 1–2 minutes. Then add the meatballs, reduce the heat to low, and cook for another 15 minutes.

    Meanwhile, place the couscous in a small bowl, pour boiling water over it, and cover with a plate. Once the meatballs are ready, uncover the couscous, season with salt, pepper, and lemon juice, and stir.

    Serve the meatballs with couscous and basil.
