  • 400 g white spelt flour plain
  • 2 medium eggs
  • 2 tablespoons liquid honey
  • 30 g vanilla whey protein
  • 300 g low-fat quark
  • 80 ml rapeseed oil
  • 220 ml unflavored sparkling water

INSTRUCTIONS

    Preheat the oven to 180 °C and line a high baking dish (25 cm × 25 cm) with baking paper.

    Sift the flour into a large bowl, add eggs, honey, vanilla protein, sparkling water, and rapeseed oil, and use a food processor or whisk to create a smooth, slightly liquid batter. Pour the batter into the baking dish and bake for 50–55 minutes at 180–185 °C.

    After baking, leave the cake in the baking dish for 5 minutes. Then remove it, let it cool for at least 30 minutes, and then spread quark over the entire surface. Cut the cake into desired portions and serve.
