  • 100 g whole grain long-grain rice
  • 200 g minced turkey meat
  • 150 g cherry tomatoes (halved)
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 40 g pitted black olives
  • 120 g cucumber
  • 40 g feta cheese (crumbled)
  • 40 g red onion (sliced)
  • 120 g low-fat white yogurt (0% fat)
  • Salt
  • Pepper
  • 300 ml water

INSTRUCTIONS

    First, cook the rice: Pour 300 ml of water into a small pot, add the rice, cover with a lid, and cook on medium heat for 20–25 minutes (or according to the time indicated on the package).

    Meanwhile, heat a non-stick pan over medium heat. Add the turkey meat and cherry tomatoes, and season with salt, pepper, oregano, and cumin. Stir and sauté for 10 minutes over medium heat, stirring occasionally. After the specified time, turn off the heat and leave the meat mixture in the pan until the rice is cooked. Then slice the black olives into thin slices, add them to the meat mixture along with the rice, and mix well.

    Next, slice the cucumber into thin slices, place it in a bowl along with the feta cheese, onion, yogurt, salt, and pepper, and mix everything together.

    Serve the meat mixture with rice alongside the cucumber salad.
