INGREDIENTS

  • 100 g couscous (dry)
  • 300 g chicken breasts
  • 1 tablespoon olive oil
  • 60 g yellow onion (sliced)
  • 50 ml orange juice
  • 20 g tomato paste
  • 1 teaspoon chili
  • 1 small handful fresh mint (roughly chopped)
  • 10 g peeled almond slices
  • 2 tablespoons pomegranate seeds
  • Salt
  • Pepper
  • 100 ml water (boiling)

INSTRUCTIONS

    Pour the couscous into a larger bowl, salt it, pour boiling water over it, and cover the bowl with cling film.

    Wash the chicken breasts, dry them, and cut them into thin strips. Heat a pan with oil over high heat, add the meat, and sauté over high heat for 2–3 minutes, stirring occasionally. Then add the onion and sauté for another 2–3 minutes.

    Meanwhile, in a smaller bowl, mix the orange juice, tomato paste, chili, salt, and pepper. After sautéing the ingredients in the pan, turn off the heat and pour the prepared mixture into the hot pan.

    Finally, put the meat mixture into the bowl with the couscous, mix, and divide into individual portions. Sprinkle each with mint, almond slices, and pomegranate seeds, and serve.
