INGREDIENTS

  • 100 g of carrot
  • 80 g of yellow onion (or white)
  • 150 g of green zucchini
  • 150 g of celery stalk (can be replaced with celeriac)
  • 250 g of pre-cooked natural jasmine rice
  • 2 tablespoons of lemon zest (finely grated)
  • 20 g of Parmesan (finely grated)
  • 400 ml of skimmed cow's milk
  • 40 g of whole grain spelt flour
  • 1 tablespoon of fresh thyme (or 1 teaspoon of dried)
  • 300 g of tuna in its own juice (drained)
  • 2 tablespoons of olive oil
  • Salt
  • Pepper

INSTRUCTIONS

    First, preheat the oven to 185–190 °C and prepare a baking dish (30 cm × 40 cm).

    Peel the carrot and onion and cut them into small cubes along with the zucchini and celery. Prepare a large bowl and add the chopped vegetables, pre-cooked rice, lemon zest, grated Parmesan, 400 ml of milk, flour, thyme, tuna, 2 tablespoons of olive oil, salt, and pepper, and mix everything together.

    Place the finished mixture into the prepared baking dish and bake for 50–55 minutes at 185–190 °C.

    After baking, remove the dish from the oven, divide the baked tuna into individual portions, and serve.
