First, prepare the individual ingredients: Cut the broccoli florets into small pieces, and peel the onion and slice it thinly along with the mushroom.
Then take a medium-sized pan and heat rapeseed oil in it over medium heat. Once the oil is hot, add the sliced mushrooms and onion to the pan, season with salt, and sauté for 3–4 minutes over low to medium heat.
Next, add the chopped broccoli florets and baby spinach to the pan and sauté for another 1–2 minutes. Then form a circle from the sautéed ingredients, crack an egg into the center, season with salt and pepper, cover the pan with a lid, and cook until the egg white is set, which will take 3–4 minutes.
