INGREDIENTS
- 30 g broccoli florets
- 1 small yellow onion (approx. 40 g)
- 1 fresh medium mushroom (approx. 15 g)
- 1 tablespoon canola oil (or sunflower oil)
- 1 handful fresh baby spinach
- 1 egg size M
- 80 g cooked long-grain white rice of any kind
- 1 tablespoon soy sauce
- Salt
- Pepper
INSTRUCTIONS
- 1First, prepare the individual ingredients: Cut the broccoli florets into small pieces and peel the onion, then slice it thinly along with the mushroom.
- 2Next, take a medium-sized pan and heat canola oil over medium heat. Once the oil is hot, add the mushroom and onion slices to the pan, season with salt, and sauté for 3–4 minutes over low to medium heat.
- 3Then add the chopped broccoli florets and baby spinach to the pan and sauté for another 1–2 minutes. Form a circle with the sautéed ingredients, crack an egg into the center, season with salt and pepper, cover the pan with a lid, and cook until the egg white is set, which will take 3–4 minutes.
- 4Meanwhile, place the cooked rice in a bowl. Once the egg is done, place the entire contents of the pan on top of the rice, drizzle with soy sauce, and serve immediately.
