INGREDIENTS
- 4 slices of toast bread (4× approx. 30 g)
- 1 handful of fresh baby spinach
- 1 handful of fresh chives
- 250 g ricotta
- 3 tablespoons plain yogurt (3.5% fat)
- 2 tablespoons olive oil
- Salt
- Pepper
INSTRUCTIONS
- 1First, preheat the oven to 200–205 °C, prepare a baking sheet, and line it with baking paper.
- 2Place the toast bread on the prepared baking sheet, put it in the preheated oven, and bake for 6–7 minutes at 200–205 °C. Halfway through baking, turn each slice of bread to ensure it is toasted on both sides.
- 3While the toast bread is toasting, take a tall mixing container, add baby spinach, chives, ricotta, plain yogurt, olive oil, salt, and pepper, and blend everything until smooth with a hand blender.
- 4Once the toast bread is baked, remove it from the oven. Spread the finished ricotta mixture on the individual slices of toast bread and serve.
Tip
Before serving, you can sprinkle the toasts with pea sprouts or radish sprouts and garnish with radish slices, fresh herbs, and pepper. You can also serve the toasts with a vegetable salad.
